Macadamia Shortbread Cookies

Crispy, crumbly and short, these easy to make buttery, nutty cookies are awesome with your morning coffee or tea and are also not too sweet!

Difficulty: Easy
Preheat oven to 170°C (not fan assisted)

Ingredients:
* 100g Butter cubes at room temperature (Option 2: Use 75g Niice Foods Macadamia Oil as a dairy free option instead of the butter)
* 25g Niice Foods Macadamia nut butter (Smooth or crunchy. We used our smooth version)
* 80g Icing sugar (sifted)
* 70g Cake flour
* 45g Cornflour OR rice flour
* 60g Chopped macadamia nuts
* 1tsp Vanilla extract
* Pinch of Himalayan pink salt (fine)

Optional: Add these ingredients to change it up: 40g white chocolate chips, lemon or orange zest or caramel chunks.

Method:
1) Cream together the butter (or Macadamia oil), Macadamia nut butter, icing sugar and vanilla extract (about 4 minutes until light, creamy and fluffy)
2) Add the flours to the creamed butter mixture (cake and rice) and the chopped nuts (and any of the other ingredients mentioned). Mix with a wooden spoon until everything comes together.
3) Roll batter into balls and flatten evenly into discs onto your baking tray (lined with baking paper)
4) Bake for about 20 minutes or until golden brown. Cool on a baking rack.
