I tried a new recipe from a beautiful cookbook called I sleep in my Kitchen, written by a Palestinian American Mariam Daud. It is a blend of Palestinian recipes handed down for her mother and classic American recipes.
The recipe I choose was a tomato Galette with Za'atar and it was amazing!! Gelattes have their origin in France, and the exact region depends on the type of Galette you are referring too. Za'atar is a Middle Eastern blend of spices used in many places within the Levant and worldwide. It is deeply rooted in Palestinian culture where it is grown in the West Bank providing livelihoods for woman's agriculture; and labneh which is also used widely in Middle Eastern cooking. Labneh is thicker that Greek yogurt, which give this dish and extra layer of flavor to enjoy. Combining these two cultures together produce a beautiful and delicious meal that I will probably make time and time again, especially now that heirloom tomato season is upon us!
I thoroughly enjoyed this recipe so much so, that I was so excited to eat it, that I forgot to take a picture of the finished galette right out of the oven. Oh well! It was still delicious😋
