When your tomato starts changing color, it’s not ready to eat, but it IS READY TO PICK! This point is called the breaker stage, and it’s the perfect time to harvest.

The change in color signifies the the plant is no longer providing nutrients to the fruit. All sugars and flavors have been locked in.

As a really awesome added bonus, letting your tomatoes continue to ripen indoors protects them from pests and splitting - the ultimate heartaches for tomato growers.
