Easy garden to table recipe! I love making pickles from all the cucumbers I harvest from my backyard garden. Refrigerator pickles are super easy. I make several types, but garlic dill pickles are a favorite.

2 cup water
2 cups distilled 5% white vinegar
3 Tbsp picking or kosher salt
Heat in a pot, stirring until solution is clear

To 2 quart sized mason jars, add to each jar 10-15 whole black peppercorns, 2 garlic cloves, and a sprig or two or fresh dill. Add prepared cucumbers. Carefully pour over hot brine, completely covering cucumbers. Optional, add 1 tsp Ball pickle crisp granules. Wipe rims of jars and add lids/rings. Refrigerate for 2 weeks before eating.

Two easy garden to table lunch recipes! Both of these recipes use lots of fresh veggies from your summer garden harvests. They are quick and easy, and the pasta salad and bruschetta topping can be stored in the fridge all week for a healthy meal prep! Let me know what type of recipes you want to see next ❤️.

Easy pasta salad:
1 package tri-color pasta, cooked and drained
1-2 cups halved cherry tomatoes
2 medium cucumbers, peeled and chopped
1/4-1/2 diced red onion
1 cup sliced Italian salami
1 6-8oz pack of feta cheese
1 small can sliced black olives
Salt and paper to taste
2 Tbsp dry Italian dressing mix
1 cup Italian dressing
*stir ingredients together and then topped with 6-8 torn basil leaves. Store in fridge

Easy bruschetta:
1 1/2 cup diced Roma tomatoes
1/4 diced red onion (optional)
1 garlic clove, diced
1 tsp of olive
A few splashes of red wine vinegar
Salt and pepper to taste
*mix and let marinate while you prepare bread

1 loaf Italian or French bread, thickly sliced
Olive oil
1 clove garlic

*preheat oven to 400F, place bread on baking sheet and brush with olive oil. Bake for 10-20 minutes until done as preferred. Remove from oven. While bread is still warm, rub each slice with garlic clove.
Gently fold in some fresh basil and oregano to tomato mixture. Spread mixture on bread and drizzle with balsamic glaze.

We’ve had some absolutely stunning flowers in the garden this year. I successfully grew hollyhocks for the first time! Usually, the rabbits mow them down before we get any blooms. I guess the trick was to plant them in the middle of volunteer celosia 😂. The petunias, Rose Campion, and Bells of Ireland were gorgeous as ever. What was your favorite flower in your garden this year?

Tomato harvest time! Today I’m harvesting tomatoes from my backyard garden. Tomato season is something I look forward too every summer. There is NOTHING like the taste of a home grown tomato. Shown varieties: Esterina, Black Cherry, Midnight Snack, Bronze Torch, Brandyboy, Arkansas Traveler, Abe Lincoln, Inca, and Blushing Star. What was your favorite variety you grew this year?

Time to plant some fall potatoes! I started planting early season potatoes in the fall a few years ago and it’s been so fun to have homegrown potatoes just in time for Thanksgiving. Potatoes are one of my favorite things to grow in my vegetable garden. Are you planting fall potatoes?

Onion harvest time! Today, I’m harvesting organic, home grown onions from my raised bed garden. These were planted in early April and it’s finally time to harvest! Onions are one of my favorite things to grow in my vegetable garden. Harvesting them always puts a smile on my face!
