Let’s give ’em pumpkin to talk about ☕️🎃

You're gonna wanna make a double batch of this!!

Ingredients:
1/2 cup pumpkin puree
1.5 cups brown sugar
2 tsp pumpkin pie spice
1/4 tsp salt
1 tablespoon vanilla
2 cups water

Optional: pinch of vanilla powder

Spread the pumpkin on medium heat, until most of the moisture is gone. Add the brown sugar, stir until bubbly. Add seasonings, and vanilla.

Slowly add the water. Simmer for 10-15 minutes.

Let cool completely before adding to a glass or plastic container.

Stores in the fridge for a few weeks! But it won't last that long 🤭

Easy peasy English muffins

Ingredients
360 g all-purpose flour (about 3 cups)
240 g warm milk (1 cup)
7 g yeast (2¼ tsp)
15 g sugar (1 tbsp)
7 g salt (1¼ tsp)
28 g softened butter (2 tbsp)
Cornmeal for dusting, optional

Instructions
Mix the dough. Combine warm milk (about 100–110°F), yeast, and sugar. Add flour, salt, and butter. Mix until a soft dough forms.
Knead for 5–8 minutes by hand until smooth and elastic. Add a little flour only if it's excessively sticky.
Let it rise. Cover and let rise in a warm spot for 45–60 minutes, until doubled.
Shape. Roll dough to about ¾-inch thick. Cut into 8 rounds using a 3–3½-inch cutter. Dust both sides with cornmeal if desired.
Rest again. Cover and let the rounds rise for 15–20 minutes.
Cook in a skillet. Heat a dry skillet over low heat. Cook muffins for 6–8 minutes per side, covered, until golden and cooked through. If they brown too quickly, turn the heat down.
Cool and split. Let them cool for at least 10 minutes, then split with a fork instead of cutting with a knife for the best nooks and crannies.

I love an easy dinner, especially when I'm solo parenting for a week, and it's raining!

EZ BOMBS for the win!

What I used:
4 chicken breast
1 large can of hominy, rinsed and drained
1 pozole bomb
2 quarts + 1 pint homemade & canned broth

(I also added frozen zucchini from the garden towards the end, because ya girl needs to eat more veggies lol)

Cook on low for 6 hours! Enjoy!
