Mom's Banana-Apple Bread
Ingredients:
1 stick plus 2 tablespoons unsalted butter, at room temperature
2 tablespoons dark brown sugar
2 Granny Smith apples, peeled, cored, and diced
1 teaspoon cinnamon
1 1/2 teaspoons vanilla extract
2 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
1/4 teaspoon ground cloves
1/4 teaspoon freshly grated nutmeg
1 cup granulated sugar
2 large eggs
2 very ripe bananas, mashed
1/4 cup fresh orange juice
Directions:
Preheat oven to 350°F (175°C). Grease and flour a loaf pan.
In a skillet, melt 2 tablespoons butter with brown sugar. Add apples and cook until tender. Stir in 1/2 teaspoon cinnamon and 1/2 teaspoon vanilla. Set aside.
In a bowl, combine flour, baking soda, salt, cloves, nutmeg, and remaining cinnamon.
In another bowl, beat remaining butter with granulated sugar until fluffy. Add eggs one at a time. Mix in bananas, orange juice, and remaining vanilla. Add dry ingredients, mix until smooth. Fold in apples.
Pour batter into pan. Bake for 1 hour 20 minutes, until a toothpick comes out clean. Cool in pan for 10 minutes, then transfer to a rack to cool completely.
