🇯🇲 AWESOME JAMAICAN JERK CHICKEN 🇯🇲


Aunt Amanda’s and I have been wanting to try The Lewins Jamaican Cuisine Food Truck over by the Pecanland Mall for awhile now. I finally took the time to stop by and see what they had going on.

Super nice folks. An Air Force Academy Grad and Veteran. Authentic traditional recipes. And let me tell you…the chicken…amazing!! 🍗 Y’all know me…I’m picky about my Q and proteins 🔥

I ordered the Jerk Chicken meal with Rice (Black Beans and Rice) and Peas and Cabbage (a blend of peas, cabbage, carrots, onions, beans, etc). Amanda and I shared it for lunch with plenty left over.

With the order you get half a chicken (1 Breast 1 Wing 1 Thigh 1 Leg). The Q really penetrated the chicken. A real good deep charcoal flavor with a hint of wood smoke. The Jerk had an amazing flavor. Not too spicy, but rich in layers. Nothing was over-salted.

We will be eating here again. Next time I’m trying the Ox Tail 🐂

Well….Uncle Mike got into Aunt Amanda’s Finishing Sugars tonight 🤪👻

Needless to say…it was worth it. These turned out pretty awesome 🤣👍🏻

Oh yeah…and I figured out how to make these in the Air Fryer…400F for 7 minutes.

🍁 WELCOME FALL…TIME TO MAKE SOME BLUE SMOKE 🔥


The temperature has dropped just enough so I don’t sweat through five sets of clothes. I’ve been itching to get back outside and BBQ for weeks now.

Going simple today….3-2-1 Babybacks. Simple rub…Yellow Mustard, Kosher Salt, Black Pepper, and Bayou Marine Cajun Blend. Will sauce a few later in the final hour.

Should be ready in time for the LSU Football game.

📢 SOMETHING IMPORTANT 👀


I’ve carefully considered the direction in which Uncle Mike's is heading. I can foresee a time when I begin to teach young people about baking and building. I can see the interest in my nine year old niece with what I do. Even my two year old niece clearly knows the business end of a drill and impact driver.

I’m also very aware it’s difficult for parents to find decent content for their children. I don’t like how the networks and online media sneak in inappropriate commercials and innuendoes, even while watching programming which is supposedly intended for children.

Kids like snacks. They also love learning how to do things. And kids like animals. Heck, I like animals. As many of you know, I also build feeders and houses for the wildlife in our back yard. I’m especially fond of the squirrels and bluebirds.

I can complain about it, or I can do something about it. So, here we are. We’ve created two animated characters for Uncle Mike’s: Caleb and Silas.

They reflect me and the nature I love to nurture. I picked these two names because they both mean “Faithful”…one in Hebrew and the other in Greek. Caleb was of the tribe of Judah, a military leader, and accompanied Moses, and later Joshua, into the land the Lord promised for His chosen people. Silas (also Silvanus) was a leader, teacher, and prophet in the early church in Jerusalem. He also accompanied the Apostle Paul on many of his missionary travels.

I plan to incorporate these characters into videos which teach young people about baking, building, and the knowledge necessary to do both…especially mathematics and critical thinking skills.

This is all part of my pursuit to create decent and appropriate content for our most valuable resource…our children.
