While we often add compost in the spring before planting, sometimes gardeners use fall applications, especially for crops like garlic. So how much compost do you use?

🪱🌱For well established or perennial beds, add 1 to 2 inches of finished compost to the surface of your beds in the spring or fall.

However, if you have a new bed or a bed with poor soil, add 3 to 4 inches of of finished compost to the surface.

Saving seeds this fall?🍅🥒 While it easy to dry a few out on a kitchen towel, for larger quantities, we find drying racks much easier to manage.

You can create your own with drying racks with old window screens or frames, staples, and screen from a hardware store. Even old wooden picture frames would work!

Lately, we've been spending a lot of time talking about garlic, but did you know that we plant bulb onions in fall too?

🧅🌱In the Southeast, bulb onions only have a short growing window in summer before the heat and long days cause the bulbs to stop growing. To give our onions as much growing time as possible in spring, we start them in cold frames in November and overwinter them.

As we move farther into autumn, frost is right around the corner for many gardeners. While season extension can help protect crops, a few crops may actually be sweeter after a light frost.

🥬Greens (Collards, spinach, mustards, kale)
🥕Roots (Radishes, carrots, beets, turnips)
🥦Brassicas (Brussels sprouts, cabbage, broccoli)

Cold temperatures signal these crops to begin converting starches to sugars, which act as a natural anti-freeze and makes them sweeter to eat.

Looking for the best winter spinach? Here are two of our favorites!

🌿Winter Bloomsdale (47 days): Adapted for late summer and early fall plantings and overwintering. The slow-bolting plants are resistant to blue mold, blight, and mosaic.

💕Beaujolais (40 days): Beautiful and unique red-veined spinach, lovely in salads. Good survival of winter freezes.

Prepping to plant garlic soon? Garlic thrives in well-drained soil with lots of organic matter, a neutral pH, and good fertility.

🍂Fall is the best time to add compost or other fertility amendments.
🪱Incorporate lots of organic matter.
🧐Check your soil acidity; strive for a pH of 6.5-7.0.
🌧️Too much moisture can be a problem in the winter garden. Raised beds may help.

It's also a good idea to have plenty of mulch on hand to apply after planting.
