We are looking forward to celebrating the death and resurrection of our Savior Jesus Christ this weekend! It’s always an overwhelming and humbling historical event to reflect on, one certainly worth gathering with friends and family in somber remembrance and joyful celebration.

We would love to help you celebrate with nutritious, delicious, and fresh eggs! Our pastured hens are loving the warmer spring weather and are providing us with lots of extra large, beautiful eggs. These bring an earthy vibe to dyed eggs and will make a scrumptious Easter morning breakfast casserole!

Meet Dawson and Sammie Finch! We are thrilled they joined us this year as they have already put in many hours doing all the things it takes to grow lots of produce!

A little about them…
Sammie shares: I love the outdoors & grew up helping my mom in the garden. Getting to enjoy the fruit of her labors & always having fresh food in the summers was something I always looked forward to. Dawson & I hope that one day we can do the same!! We are excited to learn the ropes from you guys & see another angle of God’s creative design & provision through the lens of gardening!!
Sammie’s favorite veggie is cucumbers and Dawson’s is rhubarb, specifically for jam or jelly (which maybe no longer fits the veggie category 😂).

We’re very thankful to have them along for the ride this summer!

Week one baskets were picked up yesterday! They contained head lettuce, kale, radishes, strawberries (from Mom’s patch at our original garden!), chives (also from Mom’s garden!), and asparagus or spinach. The chives on our counter this morning were begging to join radishes on my favorite spring breakfast!

The pruning process can feel risky, but it’s such an important part of plant growth! A few years back we learned the benefit of “topping” peppers (cutting off the growth tip) to encourage more branching and fruit. About a week ago I topped some plants and you can see in the first picture that there’s already some side shoots coming on. Compare to the plants that were not topped, which have no branching at the nodules. Also, some of our peppers have already started setting fruit as can be seen in the third photo but we want them to direct energy to beefing up before they fruit up.
We have found this practice to be helpful with peppers, as you can see an ample harvest of fruit in the final photo! It still makes me nervous to cut off those healthy green tops, and every year I relearn that in gardening we have to trust the process. Seeing as peppers are practically veggie popsicles to our kiddos, having a big harvest is always a blessing!

A reminder this morning that food doesn’t just come from a grocery store.

It comes from plants that begin as tiny seeds. First they are carefully planted into soil. Then they sprout. They take months to grow. And lots of labor.

Consuming food is easy to do, and we’re grateful for the reminders in the process of growing food to not take something so simple for granted.

Also…we had to buy another rack for starting seeds for our expanding garden this year😄
