So this thing happens when you become a gardener, where year after year you go through the motions. And you enjoy the garden. But then one day, you step into your garden and the results leave you awe struck!!! We grow a ton of fruit and veggies, but we also plant a lot of flowers to attract pollinators to the space. I always found this a necessary evil, In that planting space had to be sacrificed for said flowers. But now one of my greatest joys is sitting quietly for just a moment or for hours bearing witness to the joy these flowers bring to the pollinators that have made their way over! And the beauty they bring to the space is just stunning. So here's a photo dump of some pretty surprises I've captured this year!

Stuffed shells are easy to meal prep, freeze well and thaw and bake wonderfully. We use a ricotta, egg, browned ground beef and pork, salt, pepper, Italian seasoning, crushed red pepper, paprika and both mozzarella and parmesan cheese mixture to give these shells some awesome flavor. Then we nestle the shells in a bed of homemade spaghetti sauce and spinach and top with red sauce as well! Be sure to label all your meals to avoid confusion later. I also add cooking/reheating instructions to ours in case I'm at work or not home when someone gets hungry!

During a long kitchen day, sometimes you've gotta work on multiple recipes at once. It's definitely a brain workout not to accidentally putting the wrong spoon in your raw meat!...but totally worth it to get everything done in one day. After we peel and core the apples we place them into the heavy bottomed pot with a lid and allow them to soften and cook on low while we brown and strain our ground beef in another pot! Once the apples are cooked thoroughly, we mash and test of sweetness, then add our berries to make our summer berry applesauce! The ground meat was used to make our stuffed shells, baked spaghetti, lasagna and shepherds pies! We canned up the applesauce and froze all our premade dinners to be used as "fast foods" at a later date!

Apples were on super sale this week and we had a whole gallon of blackberries and blueberries left over from last year, so we are whipping up some slow cooked berry applesauce for canning.
First thing we've got to do is peel and core the apples. This little tool has saved me so much frustration over the years. One of my favorite kitchen investments!
After we wash the apples in warm water and baking soda in the sink, we rinse them and send them through the peeler/corer! Once they're peeled and cored, they go into a heavy bottomed pot for a long slow cook until mashed down. Then we add the berries and finally send it through a food mill to get that desired applesauce consistency! Then we can it up and enjoy throughout the year!
As per usual, we save those skins and cores to make some homemade apple cider vinegar!

Up next, minced fajitas. This is a twist on the traditional dump and go crock pot fajitas. These are dump and go, except we can add a jar of salsa and turn these into fajitas nachos or walking fajitas. Makes for an easy group meal/snack/munch during get togethers. Just keep some sour cream and shredded cheese nearby! Onions, garlic, bell peppers, steak or chicken diced. Then add a couple tbsp olive oil and water and a healthy measure of our fajita seasoning mix. Mix all around in bag and freeze until ready to cook! Cook 3-4 hours on high or 6-8 hours on low in crock pot! And bam, you're eating good!

Some serious meal prep is going down y'all. First up meat loaves. These are easy to bulk prep, freeze well fully cooked and can be reheated quickly to serve. Talk about fast food. Eggs, milk, meatloaf seasoning, some bread crumbs)/crackers/oat flour, Worcestershire sauce, soy sauce, salt, pepper, paprika, onion, garlic and a blend of ground beef and pork come together with some elbow grease we started with 6 lbs of ground meat and wound up with 10 meatloaves!!!

These bacon, broccoli, caramelized onion and cheddar quiche turned out AH-MAZE-ING! Had a bunch of eggs from our ladies and meal prepping this ahead for my run at work was easy. Just caramelized some onions low and slow, then added some minced broccoli and garlic. Once it is all cooked together, add it to your egg, add milk, minced bacon, self grated cheddar cheese, salt, pepper and paprika. Add to your par baked pie crust and bake at 350 for 30-40 mins until the center doesn't shake when you move your pan! These freeze and thaw well and can be customized for whatever fillings you'd like!
Breakfast quiche with cottage cheese, Colby jack and breakfast sausage is also a fan favorite!

When your doing a baking/kitchen day and the kids ask for you to fill the treat bin ... One sure fire crowd pleaser is a good old rice crispy treat! And one batch makes about 20 treats so they last a while! We just follow the traditional recipe!
