A few people have asked how we grow our microgreens, so I thought I’d share a little behind-the-scenes. 🌱

Our microgreens are grown hydroponically, which simply means they’re grown without soil. We use clean water, reusable grow mats, quality seed, and carefully controlled growing conditions to help each tray get a healthy start.

For nutrients, we use Ocean Solution, a sea-mineral based plant nutrient that is OMRI Listed for use in organic production. We like that it provides a broad range of minerals while keeping our growing process simple and clean.

No sprays, no harsh chemicals — just a lot of attention, fresh water, good seed, and plenty of care from seeding to harvest.

It’s a pretty amazing process to watch these tiny seeds turn into a tray full of vibrant greens in just a matter of days. 💚

Local shrimp + homegrown greens 🌱🦐

Picked up a pound of sweet shrimp from Carawan Seafood Co. and kept dinner simple and fresh.

Seared shrimp over spinach from the garden with a homemade Green Goddess dressing made with our microgreens, then finished it all with our new Microgreen + Lemon Finishing Salt — made from dehydrated pea shoots, radish, kale, arugula and fresh lemon zest.

The finishing salt added just the right little hit of bright, savory flavor to the sweet shrimp. 💚🍋

This is exactly why I love growing microgreens. They can be the salad, the dressing, the garnish and even the seasoning.

Fresh food. Grown close to home.

Turning extra microgreens into something delicious 🌱🍋🧂

One of the things I love about growing food is finding ways to use every bit of the harvest.

I had some beautiful extra microgreens this week, so I experimented with making my own Microgreen + Lemon Finishing Salt — and I love how it turned out!

🌱 Pea shoots
🌱 Radish microgreens
🌱 Kale microgreens
🌱 Arugula microgreens
🍋 Dehydrated lemon zest
🧂 Sea salt

I gently dehydrated the microgreens to preserve as much of their beautiful color, fresh flavor and goodness as possible. Once completely dry, I ground them and blended them with sea salt and dehydrated lemon zest.

The result is a savory, slightly peppery, citrusy finishing salt — and the flecks of bright green microgreens and golden lemon zest make it pretty, too.

I can already think of so many ways to use it: grilled fish or shrimp, roasted vegetables, chicken, avocado toast, eggs, tomatoes, salads, potatoes, popcorn — or even around the rim of a savory cocktail.

A little sprinkle right before serving adds color, flavor and a little taste of the garden. 🌿

I think this experiment might be a keeper!

🌱 Pea shoots might just be my favorite microgreen to grow.

There’s something about them that reminds me of spring — that fresh, sweet flavor of early May peas, but in a tender little green shoot.

They’re so easy to use, too. I love them on chicken salad wraps, avocado toast, eggs, sandwiches, and salads. I’ve even made a quick fresh pesto with them, and it was delicious.

We’re dropping off fresh pea shoots this morning at Tarheel Too produce market, along with:

🥦 Broccoli
🌿 Arugula
❤️ Radish
🥬 Kale

If you’ve never tried pea shoots before, this is a great week to grab some. Fresh, slightly sweet, crisp, and full of spring flavor. 💚

🌿 Fresh basil delivery this morning! 🌿

We’re headed to Tarheel Too produce market with three beautiful varieties of fresh basil:

🌱 Genovese Basil — sweet, aromatic, and classic. Perfect for pesto, pasta, pizza, caprese salads, and tomato dishes. Tar Heel Too just received some beautiful heirloom tomatoes, and they would be the perfect pairing with fresh Genovese basil, mozzarella, a drizzle of olive oil, and a little balsamic. 🍅🌿

🌱 Thai Basil — slightly spicy with notes of anise and licorice. Delicious in stir-fries, curries, noodle dishes, soups, and spring rolls.

🌱 Mrihani Basil — bright, citrusy, floral, and wonderfully fragrant. Try it with seafood, salads, fruit, vinaigrettes, cocktails, or anywhere you want a fresh twist.
