The garden is winding down and I am certainly ready for some cooler days and the pantry filled up with harvested produce and preserved food to enjoy all winter long.

Independence is not built in a day.

It is built one skill, one season, one jar at a time.

One summer of growing tomatoes. One autumn of preserving them. One winter of eating what you put away yourself.

Then you do it again. And again. And slowly without noticing you become someone who needs the system a little less every single year.

That is the whole plan.

Last week was an extremely busy week after a week of vacation. The garden looked like a jungle. Monday I spent the day harvesting everything that was ripe.
The rest of the week was spent preserving everything
12 quarts of vegetable soup
8 packages of corn
5 bags of greenbeans and 8 pints of canned greenbeans
6 jars of refrigerator pickles
6 pints of picante sauce
2.5 pints of tomatoes
3 pints of pineapple zucchini
1 pint of sundried tomatoes (sorry no picture)

I harvested an abundance of vegetables yesterday.
29 banana peppers
44 chili peppers
24 cucumbers ( many were disposed of due to being over ripe)
13 lbs of tomatoes
10 cherry tomatoes ( many were over ripe and disposed of)
3 green peppers
34 ears of corn
Pole beans (Kentucky)
Bush beans (Tenderette)

27 Onion harvested and ready for curing.
They need to be put in the shade with good air flow. I put these on our pole barns covered porch. It will take about 2-3 weeks.
This was not a good year for me growing onions. The onion sets I purchased only a portion of them grew.
The ones I started from seed also did not do well. Sometimes that just happens. I'm always thankful for any amount of harvest I get.πŸ™ŒπŸ™Œ
