Pickled Beets:
Appx. 5 lbs. Alaskan Beets
4 C H2O
4 C sugar
4 C white vinegar
1 tsp. Pickling salt
4 T pickling spice
2 cinnamon sticks crushed with a rolling pin.

Harvest beets leaving 1” of the stems. Wash and boil until beets are a firm tender. While beets are cooking, combine above brine and boil. Drain beets. Remove tops and taproot, peel. Press the beet skin, it should peel off with your hands. A pairing knife is minimally needed. Chop into bite size pieces. Add to the above brine. Heat till boiling. Fill warm sterilized jars with beets only. Pour brine/beet liquid into Pyrex bowl with pour spout and fill jars to 1/4”. I find this method works well instead of using a ladle. Remove air bubbles. Wipe rims with warm cloth. Add warmed lid then cap. Place in hot water bath for 30 minutes. Remove cool overnight. Check seals. Reprocess any that didn’t seal.

Rhizobium leguminosarum, forms a mutualistic symbiotic relationship with legumes. The bacterium colonizes in the roots of legume species and forms nodules. It coverts atmospheric nitrogen into a form the plant can use. In exchange, the plant provides carbon (sugars) compounds to the bacteria.

Ranuculus, pure layers of northern Alaska grace! Ranuculus is a corm that requires pre-ordering/soaking/planting prior to Alaska’s spring. A cool temperature flower that prefers daytime temperatures of 55-65F and nighttime temperatures at 40-50F. Thus, they did better this summer!
