We raise our own chicken and will have extras around the end of October. They are pasture raised without antibiotics or hormones of any kind and each chicken weighs at least 6lbs.

$4/lb for whole chickens or $5/lb if parted out (breasts, leg quarters, wings).

Many people don't know that the U.S. government used to give away pressure canners. The Farm Security Administration (FSA) was part of Roosevelt's "New Deal" and it was designed to aid poor rural farmers. Among many other things the FSA did was offer classes in pressure canning, sending poor farmer's wives home with a pressure canner at no cost to them.

Whatever else we may think about this program, there's no doubt it made the lives of poor rural women a little better - and helped give poor families better nutrition. Before they adopted pressure canners, these families ate only root cellar vegetables (and dried peas/beans) in winter. As those root vegetables sat in the cellar, they gradually lost nutrtion, and by late winter or early spring they were often gone, resulting in a "hunger gap" in their diet until spring provided wild weeds to eat.

In addition, meat supplies could run low, as families were relying on smoked meat, butchered in fall. Fresh meat could only be had in winter if someone had time to hunt.

This photo was taken in August of 1941 by an FSA photographer John Collier. It features Eulia Smart, who is quoted by Collier:

'I never had a pressure cooker before, an' when I got this one, I canned everything in sight' -- 264 quarts since spring."
