When a system shuts down completely overnight, the building drifts far from its target temperature. The next morning, the unit has to run hard for an extended stretch to recover before doors open, putting added wear on key components.

A programmed setback schedule keeps temperatures within a reasonable range while the building is empty and brings the space back to comfort ahead of opening. With heating season starting, now is a good time to review your thermostat schedules and confirm they match your actual operating hours.

To every healthcare foodservice professional keeping that operation running, thank you. Your work is part of patient care.

Don't ghost your pizza ovens. October is National Pizza Month, and it ends with one of the year's biggest nights for pizza sales.

Signs your oven is in need of service include uneven bakes, longer cook times, and an uptick in remake requests. Schedule a service check now on temperature consistency, door seals, heating components, and conveyor speeds before order volume peaks.

Get your ovens ready while there's still time!

A griddle is never one temperature all around. Burner placement, plate thickness, and where the last order sat all create variation across the surface, and the gap between zones widens as a thermostat drifts.

That variation decides whether the tenth burger matches the first, even with the same recipe and cook time. Checking plate temperature across zones rather than at the thermostat alone is what keep output consistent.

November and December leave no room for a fryer or walk-in cooler downtime. Late September through October is the last stretch where planned work happens on your calendar instead of on the equipment's.

Operators who treat Q4 prep in September spend the holidays running at volume. The ones who wait spend it fielding emergencies. Which one will you be?

Fall menus ask more of a combi oven. Braising, roasting, and batch cooking lean on steam, and steam performance depends on two things operators rarely check until output goes inconsistent: water quality and probe calibration.

Scale can build in the generator, changing how quickly the cavity reaches setpoint. A probe drifting a few degrees produces food that looks right and holds wrong. Neither of these show up as equipment failure but will look like a dish coming out differently this week than last.

If your combi oven's consistency is starting to drift, now is the time to get it checked.

Today, we pause to remember the lives lost on September 11, 2001. We honor the first responders who ran toward danger, the survivors, the families who continue to carry this loss, and the service members who have since served our country.

Their courage, sacrifice, and resilience will never be forgotten.

As we transition into fall, a few systems are worth getting ahead of before the season turns: HVAC and ventilation that spent all summer moving heat out of the space, the refrigeration that ran overtime holding temp, and the ovens and fryers that carried busy months. Add the heating systems that sat idle all summer and are only weeks from being asked to work again, usually on the first cold morning no one planned for.

Get ahead of each one now, with a preventative maintenance plan across every major system.

As summer winds down and menus start to turn over, that shift reaches your equipment long before it reaches the plate. A fall menu may change which equipment carries the load. A station that coasted through summer might suddenly anchor the whole menu. Equipment that sat lightly used for months can find itself running at full demand with little warning.

Operators who make the transition smoothly tend to treat a menu change as an equipment change too, checking that the equipment taking on new load is ready for it before the new menu goes live.
