At this time of year the vegetables are coming into the kitchen at a frightening rate so we are forced to find preserving solutions. Our favourite is lacto fermentation. For those who aren’t familiar - it is SO simple. Just stuff your veg into a jar and cover with a salty brine. Leave sit on the kitchen counter until it starts to taste a little funky (in a good way!) and then refrigerate for longer storage.
