Meet Achocha (Cyclanthera pedata), also known around the world as Caigua, Slipper Gourd, Stuffing Cucumber, Lady’s Slipper, and Sparrow Gourd (小雀瓜)! While it’s native to the high Andes of South America, it grows incredibly well right in garden plots and climbs up fences like crazy.
Today, we harvested our homegrown, organic Achocha straight from the vine to cook up a fragrant Sri Lankan Coconut Curry! 🥥🌶️

If you ever get your hands on fresh Achocha, here is how we transformed ours into a comfort meal:
Harvest & Prep: Pick mature pods, slice them open, and scoop out the hard black seeds. Thinly slice the hollowed shells.
Spices: Toss the sliced vegetable in red chili powder, turmeric, roasted Sri Lankan curry powder, and a dash of salt.
