We are passionate and experienced wild food foragers whose emphasis is upon sustainable foraging practices and creating delicious ingredients and recipes with our wild harvest. We make the most of the edible wild plants, mushrooms and game available to us here and are particularly accomplished wild food cooks with signature dishes ranging from mixed wild mushroom risotto to garlic leaf & nettle pe

sto, to balti rabbit pie and pigeon pastilla. In all, we enjoy sharing our passions, knowledge, special places and foods with like-minded folk – preferably around a campfire or by the range in our Wild Food Wagon kitchen! WILD SHENANIGANS

Providing scientific, environmental, creative and culinary activities relating to the natural harvest of the landscape Northern Wilds offers a unique way to experience the Northumberland countryside. On a foraging workshop we will teach you how to identify, prepare and cook wild foods seasonally plentiful in this landscape; these could be mushrooms our ancestors ate, medicinal herbs the Romans introduced or the ever abundant wild rabbit! Other outdoor or creative activities for families or groups range from bushcraft & campfire cookery to being imaginiative with the resources we find out in the wilds; making dens, wands, wings, bows & arrows, headresses or dream-catchers with materials such as branches & shoots, flowers & grasses and nettles & feathers! We can tailor our activities for your group or event; develop a theme or explore a specific location, combine activities or plan, prepare and enjoy a natural Northumberland feast! With our quirky Wild Food Wagon we can cater for your event. We can attend your event or offer bespoke event preparation and delivery. We are a distinctive presence and can provide unique experiences from culinary wild food delights, campfire cooking areas, outdoor occasion tents, music and visuals, to creative activities and awesome locations.

We've been sharing our skills with Robson Green again and are due to feature in his new series of Weekend Escapes to air soon. We've appeared on quite a few of his shows over the years... celebrating the truly lush and nourishing (in all ways) Northumberland Landscape... this photo was from a shoot a few years ago... so we're all a little greyer these days... wiser too of course... Realised we've been teaching foraging for over15 years now!

Just to let folk know how our Foraging Experiences will be scheduled across Northumberland for next year:

Early Spring - Seaweed and Sushi
Mid Spring - New Greens... 'Eats, shoots and leaves' flowers too!
Early Summer - Coastal Plants
Late Summer til October - Mushroom Foraging

We host at least one event per week during each season. We are also planning to do Wild Foodie Days... when we focus upon one specific harvest and spend the day exploring all its' culinary possibilities... learn how to make lacto-fermented wild garlic leaf or elderflower (turkish) delight...

There's an abundance of Tree Ear fungi out at the moment... Enjoyed photographing this beautiful specimen today whilst remembering the taste of a particular delight we made a few years ago... When we dehydrated some, rehydrate them in blackberry whiskey and dipped them in dark chocolate... A fungi take on Turkish Delight... Well worth a go with any tastey liquid...

Here it is - The full timetable of activities and workshops taking place at The Northern Fungi Festival on Sunday 5th October at Paxton House!

There are activities taking place all day from 10am until 4pm, and something for all ages and levels of fungi interest.

Please remember this is a CASH event!

Activities
🌿 Northern Wilds will be running two guided mushrooms walks around the grounds of Paxton House. This session is free to attend and will be running at 11am and 2pm, and will operate on a first come first served basis.

🍄Join Arthur, Sybbie and The Grizzly Forager on a family friendly fungi walk through the grounds, searching for weird and wonderful fungi from 12pm and 2pm. These sessions are free to attend and will operate on a first come first served basis.

🌿Lisa from Edulis : wild food will be leading a walk looking at the symbiotic relationship between fungi and trees and how this can help us on the quest for wild mushrooms! The walk will begin at 1pm and has a fee of £8 for adults and £2 for children and will operate on a first come first serve basis.

🍄Mrs. Grizzly will be ending the day with a calming and peaceful woodland mindfulness session at 3pm. This session is free to attend and will operate on a first come first served basis.

🌿The guys from Northern Woodcraft will be setting up outside of the marquee with bushcraft talks and demonstrations running from 10am covering firelight, forgotten skills and spoon carving so be sure to drop by!

Education Room

🍂Local author and illustrator Kylie Dixon Mbe will be hosting two story telling sessions centred around her World of Mushroom Marvelous book series. The sessions will run at 10.30 and 12.30 and are open to children aged 5-10. The workshops are free to attend and will running on a first come first served basis.

✨ Rhyze Mushrooms will be joining us in the Education Room from 1.30 for a two hour workshop about radical mushroom cultivation. This is a hands-on workshop and you'll leave with a grow your own Oyster mushroom kit and a mycelium candle holder. Pre-booking is essential and there are multiple pricing options for tickets.

Marquee

🍄JAG ART 82 will be hosting an arts and crafts drop in session for all ages in the marquee, come along and get creative with colourful paints, and magical mushroom-inspired crafts. They will be in the marquee from 10am until 12pm.

✨From 1pm in the marquee, Creative Space North East will be leading a workshop and helping you to make your own autumnal garland to take home with you. It will be running on a first come first served basis with a fee of £8 for adults and £5 for children.

This is just a small snippet of what you can expect on the day and we still have so much to tell you! Announcements will be coming thick and fast over the next week in the run up to the festival so please keep checking back for more information.

It's my favourite elderflower recipe... Courtesy of John Wright page 232 in the River Cottage Hedgerow Handbook No7... I've tweeted the recipe over the years - I add an extra 3rd cornflour into the mixture to ensure a firm set. Truelly Delightful...
