First up on the roster for today’s scape rendition….
Chive and Cheddar Mounds from jill.winger ‘s The Prairie Homestead Cookbook
Instead of using chives, as I didn’t have any on hand, I sliced up some garlic scapes super thin and used in place of the chives
These turned out so delicious and paired well with a lasagna soup 😋

Guys, it’s garlic scape season and I’m so excited I just about wet my plants!!!

🧄Why am I excited?
Once the scapes have been harvest the garlic will be ready in about a month!!!

🧄What are garlic scapes?
A long hard stem with a bulb that grows out of the garlic (hard neck varieties). If left uncut the bulbs will turn into a flower

🧄To cut or not to cut?
Cut. Once cut all the energy gets put into growing the bulb that’s underground

🧄Can I eat these?
Yes! Garlic scapes have the texture of asparagus and taste more mild compared to raw garlic

🧄 How can I eat these?
Garlic scapes are fairly versatile, they can be used in soups/stews, stir fries, made into a butter for garlic bread, infused into salt, almost any way garlic is used

🧄Great for freezing in olive oil, dehydrated and freeze dried
