Indirect grilling isn’t a single technique, it’s the key to roasting, smoking, plank grilling, and even rotisserie cooking on your BBQ. By cooking over unlit burners, you unlock more control, more flavour, and versatility.

🔥 Here’s how to master a few go-to methods:

Baking or Roasting - Perfect for longer cooks, especially meats, that run 60 minutes or more.

Set up your Napoleon grill for indirect heat by turning outer burners on and middle burners off, then let it preheat to your desired baking or roasting temperature. Once you’re up to temp, you can place your food on the grill to bake or roast using indirect heat!
PRO TIP: For meats, a reliable thermometer like the Napoleon ACCUPROBE PRO X ensures perfect doneness every time.

Plank Grilling - an easy way to add smoky, wood-fired flavour to your food.

Soak your plank in water, wine, juice, or beer for at least 30 minutes before cooking. Preheat your Napoleon barbecue and (if the recipe calls for it) preheat the plank too. Once preheated, add your food directly onto the plank.
PRO TIP: you can also plank grill over direct heat for a quicker, smokier finish (just keep an eye on that plank!)

Rotisserie Cooking - ideal for juicy, crowd-pleasing feasts.

Before you start, make sure your food can spin freely on the rotisserie based on your grill lid height and accessories. Remove grates if needed and add a drip pan underneath to catch those flavourful juices. Preheat your Napoleon grill using the rear burner or outer bottom burners. Balance your food on the spit and let it rotate to perfection.
