Orosi Organic, our restaurant set to be within The Avenue, Rose Bay, will have a story for every element on the table, olive oil being one of those.

We source every bottle from Mudgee, a region whose cool climate, elevation and mineral-rich soil create some of the finest growing conditions for olives in the world.

It's why the oil that comes from this region carries such depth... Peppery on the finish, grassy and vibrant up front, with a character that changes subtly from harvest to harvest.

The olives are cold-pressed within hours of picking, preserving the antioxidants and natural aromatics that heat and time would otherwise strip away. No blending, no shortcuts, just fruit, pressure, and patience.

It's a small detail on a menu, but it's the kind of detail we care about at Orosi Organic, Rose Bay.
