Light changes how stone reads more than almost anything else in a room.

Under a low strip of warm light, this panel glows from the base up, its veining drawn in amber. In daylight it would read cooler and more restrained. Part of choosing stone is knowing how it will look at every hour.

Some rooms are designed around a single shape. In this one, it's the arch.

The stone was cut to answer it. The shelves sit within the curve, the back panel fills it, and the bench finishes in a rounded end that echoes the line above. Each piece is cut for this room and no other.

Ask an installer what they make and the honest answer is: nothing you'll notice.

The best stonework on site leaves no trace of itself. Every joint is filled, levelled and cleaned by hand until the eye passes straight over it. That's the art.

Not every part of the job can be finished in the workshop.

Once the stone is on site, the final stage is completed by hand. The adhesive is mixed by hand, each piece is aligned in place, and every corner is set where it will stay.

It's careful, unhurried work, done in the room the stone was cut for.

Most people only see a room when it's complete. This is the part before.

The stone is often one of the first finished elements on site. The walls are still open and the room is still being built, but the stone is already in place, exactly as it's meant to be.

Everything that follows is measured against it.

Every workshop needs a pause.

Ours comes with a reminder of how much is in motion at once.

Each piece on the floor has a job number, a drawing and a client waiting on it, and each one will be picked back up at the same standard it was set down at.

A few minutes of quiet, then back to it.

Every edge is a decision made before the saw ever touches the slab.

On this vanity, the mitred corner carries no seam, no give, just stone meeting stone exactly where it was measured to.

It's the kind of detail most people won't consciously notice, but it's the difference between a job that's finished and one that's right.

This is the standard we hold ourselves to, on every piece that leaves the workshop.

A day in the Pazzi workshop rarely means one job.

On the floor today, curved benchtops for a home in Toorak are being finished and checked to confirm every measurement is exact.

A cooktop piece has been prepared for round induction hotplates.

And undermount sinks in Patagonia have been prepped, with fibreglass rods reinforcing the stone all the way around.

That reinforcement disappears once the benchtop is installed. It's done for the client, not the camera.

We work from the architectural plans, whatever the complexity.

Happy National Coffee Day.

There are few things better than a good coffee on a well-made benchtop, and we take both seriously.

POV: You're watching a master at work

Watching this made us appreciate how much of this craft still comes down to hands, not machines.

Every pass on a curved edge smooths the profile a little further, checked by eye, refined again and again until it reads as one continuous line instead of a series of cuts.

Automation can cut a curve, but it takes years of trained judgment to actually finish one.
