To all Food businesses, under Standard 3.2.2A, from 8 December 2023 all food businesses that process potentially hazardous food, and serve it ready-to-eat, must be able to show their food is safe.
This is to ensure businesses are actively monitoring and managing key food safety risks related to food temperature control, food processing, and cleaning and sanitising, which are critical for food safety.
The requirement can be met by maintaining records or demonstrating to authorised officers that the business is safely receiving, storing, processing, displaying and transporting potentially hazardous food, and cleaning and sanitising.

Finished a Bakery The Naked Baker cool room & blast freezer room. Freezer room got down to -36 degrees. Normal running will be set at -25 degrees which the client is happy with.

Just sharing a project, we completed about a week ago for a client, original system was installed about 35 years ago and with compressor failure recommended to update plant room and refrigeration system to new condensing units and controls. Kept original evaporators they were replaced about 5 years ago, but everything else was replaced. Photos attached are previous setup which always had a heat issue in a small plant room with no forced ventilation to a totally redesigned plant room from us, with a redesigned condensing unit to suit the room.
