To go along with our fire cider that we made a few weeks ago, this jar of garlic honey pairs perfectly! That scratchy throat or dry cough… this will soothe that! In addition to this use, it’s also so good to add to
in homemade salad dressings or to glaze chicken and/or veggies! ❤️

This is super easy to make!! Just add 20-25 crushed garlic cloves to a clean pint jar. Add RAW honey (make sure it is raw honey, as processed honey affects the fermentation process.) Place a lid loosely tight on the jar and open it every other day to allow any gasses to escape. I typically turn the jar as well to make sure the garlic is moving through the honey. Over the next few weeks the garlic will start to release its juices and the honey will start to thin a bit. Turning will help incorporate everything together. After about 3 weeks your honey will be ready to use.

Oh my gosh y’all!! Mom and I didn’t think we’d ever get finished with this bean project, but we finally got it done!! 🤩All in all we yielded around 110 pints of beans/peas…..Red Beans, Blackeyed Peas with ham, Pinto Beans and Navy Beans with ham. SO happy to be able to share some of these with some sweet family members AND look forward to the convenience it will gift us in the future!

It’s been a “bean and pea day” all day!! We started replenishing our bean shelves a few weeks ago with the Great Northern bean, but our tomatoes cut the line, so we are now back at it!! Today’s stars ended up being Red Beans and Blackeyed Peas with Ham. Beans are such a simple and nutritious way to stock your pantry!

Our sweet friend gifted us some peaches from her family orchard.🍑🥰 Mom and I were just too pooped to can them, so we decided to preserve them in the freezer.

Once the skins were removed, we pitted and sliced. Added “fruit fresh” to keep the beautiful color and then bagged for the freezer.

Looking forward to enjoying these in a future peach cobbler or pie!

We were tired of never having fresh garlic on hand when we needed it, so we now make “garlic pucks”. Super easy and definately convenient! 🥰

Ingredients: Garlic cloves and olive oil. (We like to get these 3lb peeled garlic bags from Sam’s or Costco. Today we chose to process two bags, but you do the amount that’s right for your needs! 😉)

Directions:
*Using your food processor, place whatever amount of garlic you want to process and a few good drizzles of olive oil into the unit. The olive oil acts as a binder to help keep the garlic pieces together. (If making a large amount as we did, work in smaller batches).
*Pulse food processor until garlic is minced size and uniform. Empty into a bowl. Repeat if making multiple batches.
*Using a cookie scoop or spoon, scoop the garlic into small balls and place on a baking sheet. If garlic is not sticking together, add more olive oil and continue.
*Once baking sheet is filled, place in freezer 6-8 hours or overnight to harden. Freezing independently helps the pucks not freeze together and are easy to remove from freezer container when needed.
*Remove garlic “pucks” from baking sheet and place in a freezer safe container or freezer bag.
*Store in freezer and enjoy when needed!

Note: We yielded about 212 pucks which we shared.

My bean shelves are getting thin! Canning some different types of beans in the next coming weeks. Today’s “star” is Great Northern. Such a wonderful mild, creamy bean that is able to take on whatever flavor is thrown at it. White Bean Chili, Tuscan Bean Soup and Ham and Bean soup are just a few ideas for its uses. Too hot for soup? Try a white bean hummus or chill and toss on top of a salad!

Let’s make some fire cider! Fall is fast approaching and we need to get our fire cider ready for this upcoming season. For those new to fire cider, it’s a great natural remedy for sore throats or even a shot taken every day as a preventative!
