In less than five minutes this video shows how to make a Duck Egg Frittata by Meyer Hatchery. Here's the recipe. A printed copy is available at the Farmstand when you get a dozen duck eggs for $5.
This delicious duck egg frittata is quick, simple, and full of flavor! Watch as Amanda whips up this eggcellent recipe that is sure to be a family favorite.
Ingredients:
• 3 duck eggs
• 1/2 a medium tomato diced
• 1/2 jalapeno diced
• 1/2 Tablespoon olive oil
• 1/4 teaspoon cumin
• 2 teaspoons fresh cilantro, chopped ( plus additional to garnish)
• salt and pepper to taste
• 1/2 cup of mozzarella cheese
Instructions:
1. Preheat your oven to 400 F
2. Dice half of a medium tomato
3. Finely dice 1/2 Jalapeno (remove seeds for less heat)
4. Chop 2 teaspoons (or more) fresh cilantro
5. Place an 8-inch skillet over medium heat and add olive oil, tomato, cumin, and mix to combine
6. In a medium bowl add 3 duck eggs, 1/2 cup of shredded mozzarella cheese, cilantro, and give it a good whisk.
7. Then add salt and pepper to taste, and whisk again to combine.
8. Add egg mixture to your skillet and allow it to cook.
9. Make sure to take a spatula and lift the edges to allow any uncooked egg to flow to the bottom of the pan.
10. Cook until edges are slightly set and then transfer your skillet to the oven to finish cooking. This should take 10-15 minutes.
11. Remove your frittata from the oven.
It is delicious to eat all on its own but you can choose to top it with sour cream or Greek yogurt, your favorite salsa, and garnish with cilantro.
