Back in Tampa after an incredible few days at the CFESA Annual Conference in Lake Geneva.

What struck me most wasn't just the learning; it was the connections. Hearing other owners and techs share their challenges and wins. Meeting manufacturers who are invested in helping us train our people better. Realizing we're all fighting the same battles and solving similar problems.

This is what the industry needs more of: real conversations, genuine relationships, and a commitment to getting better together.

Thanks to everyone who made this conference special. Let's stay connected and keep pushing the industry forward.

The fryer and oven aren’t doing all the work.

Every hour a commercial kitchen is operating, exhaust and make-up air are part of the equation too.

Changes in airflow, fan operation and kitchen pressure can show up in ways that don’t immediately point back to the equipment above you.

Our October article looks beyond just what’s sitting on the cook line.

🏈 FINAL WHISTLE: The rush is over. Did your kitchen keep up?

Your ventilation system doesn’t get a timeout. Through hours of heat, smoke, grease, and nonstop cooking, it has to keep pulling from kickoff to the final whistle.

If the kitchen felt hotter, smokier, or harder to work in as the rush went on, your airflow may be telling you something.

🌬️ A strong first half isn’t enough. Your ventilation has to finish the game.

🏈 WATCH THIS: The most overlooked game-day problem might be your walk-in door.

Open. Close. Open. Close. All game long.

Every trip into the walk-in lets warm, humid air inside — and during a heavy rush, your refrigeration system gets less time to recover before that door opens again.

A weak gasket, bad closer, or refrigeration system already struggling to maintain temperature can turn that extra traffic into a problem fast.

❄️ Game-day volume tests more than the cooking line.

See what else should be checked before kickoff.

🏈 SECOND HALF: Can your walk-in handle the pressure?

Every time that door opens, warm air gets in — and during a game-day rush, it happens over and over again.

Your walk-in has to recover fast enough to keep temperatures where they belong while your crew keeps moving. If it’s already struggling, heavy traffic can expose the problem quickly.

❄️ Don’t find out during the fourth quarter.

Keep your refrigeration ready for game-day demand.
