How do you repair a stripped out towel holder?

The solution is simple. Remove loose drywall dust, spray "Great Stuff" insulation foams in the hole and on the wall anchor and tape the edges to prevent foam from coming out!
NOTE: Make sure you have plastic work gloves, a drop and Acetone to clean up. Easy Peezy! (Not a paid advertisement!)
