Hello: My name is Mantana Heim and I am a local Artisan baker in Moneta, VA.. I make Sourdough breads , yeast breads and pastry . Working in the German Bakery at Concordia College in Bemidji, MN. in 2018 had increased my knowledge in commercial baking both in breads and European type pastry. I make artisan bread because I love to make it. I love to have ot

hers taste the good bread versus the grocery store one. There is no comparison between the two. My breads are a gift of love and even though my favorite bread, the Vermont sourdough bread takes 3 days to make it,I am still making it so others could taste it too. Artisan Bread"? An artisan is a crafts person whose products are made by hand. Artisan bread has been defined as "a bread produced primarily by hand, in small batches, with particular attention paid to the tradition of the bread baker's art, and thus using as little mechanization as possible in the production of bread. The goal of large commercial bakeries is to produce as much bread as inexpensively as possible. The goal of small bakeries and micro bakers, is to simply make the best bread. Artisan breads may be made from all types of grains and may include various flavorings." Sourdough recipes are made with the sourdough culture that I have successfully maintained for many years. Yeast breads are usually started with a pre-ferment and a small amount of commercial yeast. Dough are allowed to ferment very slowly adding to the full flavor of the finished loaves. Varieties change weekly, new ones added from time to time. Sourdough flavors include: Country White, Whole Wheat, Oatmeal and many others. I introduced my dad to my fiancé at the wedding — the moment he saw his face, he turned pale and said, "How can it be you? I was sure YOU DISAPPEARED 30 YEARS AGO!"
I always thought I would cry from happiness on my wedding day. More than anything, I wanted my father to walk me down the aisle.
He had raised me on his own. My mother disappeared from our lives when I was very little, and Dad never complained.
He braided my hair before school, worked night shifts, sat by my bed when I was sick, and always told me:
"Your life will be better than mine. I'll do everything to make sure of it."
My fiancé, Julian, had only seen him a few times on video calls. We had been living in Europe for three years, and the internet was always freezing.
When we came back before the wedding, Dad came down with a fever and missed the rehearsal dinner.
"I'll see him tomorrow, when I walk you to him," he said with a smile. "That's the right way."
And then we were standing at the church doors. I could hear the rustle of my dress, smell the white roses, and feel my father's uneven breathing.
Julian was standing there. Tall, calm, in a black suit. He smiled at me.
But then Dad suddenly stopped.
His fingers dug painfully into my arm. He took a step back, and I barely managed to hold him up.
"Dad?" I whispered. "What's wrong?"
The music in the church faded. Even the candles seemed to burn more quietly.
Dad wasn't looking at me. He was looking at Julian.
"No..." he breathed. "No, this can't be."
Julian stopped smiling.
Dad lifted a trembling hand toward his face.
"HOW CAN IT BE YOU?" his voice cracked through the entire church. "I WAS SURE YOU DISAPPEARED 30 YEARS AGO!"
I felt the floor vanish beneath me.
"Do you know each other?" I asked.
Dad whispered a name I had never heard in my life.
Julian's eyes locked on mine.
"It's too late to change anything. NOW YOU CAN FINALLY LEARN THE TRUTH ABOUT WHY I'M MARRYING YOU." ⬇️

MY 4-YEAR-OLD POINTED AT MY BEST FRIEND AND GIGGLED, "DAD'S THERE" — I LAUGHED UNTIL I SAW WHAT HE WAS POINTING AT.
We were celebrating my husband's 40th birthday in our backyard.
His parents were there. Our friends. Family. Way more people than I could realistically handle.
I was running around nonstop — refilling drinks, bringing out snacks, making sure the kids had enough sugar and didn't destroy anything, all while trying to hold conversations.
Our 4-year-old son, Will, was crawling under the tables with the other kids, giggling like crazy. His knees were green from the grass.
At one point, I noticed his hands.
Filthy.
I pulled him out and took him inside to wash up. I was about to bring out the cake — I wanted him clean before that.
But in the bathroom, he wouldn't stop laughing.
"What's so funny?" I asked.
He grinned.
"Aunt Ellie has dad," he said.
Ellie — my best friend since childhood. We grew up together. She's like a sister to me.
I paused.
"Aunt Ellie?" I repeated.
He nodded, completely pleased with himself. "I saw it when I was playing."
My stomach tightened.
"What did you see, Will?"
"Come. I'll show you."
He grabbed my hand and dragged me back outside.
The party was loud. People talking, music playing, glasses clinking.
Will pointed straight at Ellie.
"Mom," he said, loud and proud. "Dad's there."
Ellie laughed. I laughed too.
But he didn't.
He kept pointing.
Insisting.
And then I followed his finger.
Not to her face.
Lower.
And the second I understood what he was pointing at—
I felt my whole body go rigid.
"Ellie," I said, forcing a smile. "Can you come inside with me for a second?" ⬇️
