Quick “Fridge” Pickles:
•
Let jars cool to room temperature, then refrigerate. Most quick pickles
taste great after 24 hours—flavor deepens after 2-3 days. Eat within 2–3
months for best texture.
Wash and prep fresh produce (slice, trim, or blanch if needed)
Brine can be what ever spices you like as long as the liquid is vinegar.
Ideas: Garlic & Dill, Hot Peppers & Ginger
Measure and simmer brine with your choice of spices
Pack veggies and spices into clean jars
Pour hot brine over produce, remove air bubbles, seal jars
Cool and refrigerate
Label and enjoy within 3-5 days for refrigerator pickles
