I made literally the BEST fried tomatoes I’ve ever had for dinner tonight !! I even snuck some sourdough discard in there, duh 😌

Here’s how I made them:
2–3 firm garden tomatoes, sliced
½ cup sourdough discard
2–3 tbsp milk
½ cup flour
½ cup cornmeal
½ tsp garlic powder
½ tsp salt
black pepper
oil, for frying

Stir the discard & milk together until it’s loose enough for dipping, think thin pancake batter.

Mix flour, cornmeal, garlic powder, salt and a good crack of black pepper in another bowl.

Marinate those tomato slices with some salt on each side, dry with a paper towel then dip, dredge and straight into a skillet with about ¼” of hot oil.

Give them 2–3 minutes per side until golden & crispy

Drain on paper towel, sprinkle with flaky salt and eat while they’re hot.
