Ingredients:
-1/4 cup granulated sugar
-1 tsp ground cinnamon
-2 medium or 3 small red apples
-Juice of 1 lemon
-1 lb or 2 sheets of puff pastry, thawed according to package instructions*
-All-purpose flour, for dusting
-4 Tbsp unsalted butter, melted.
-3 Tbsp Apricot preserves or apple jelly
-Powdered sugar, optional for dusting
Instructions:
1. Preheat oven to 375°F and grease a 12-cup muffin tin. Mix cinnamon and sugar; set aside.
2. Slice apples in half, remove cores, and cut into very thin slices. Place in a bowl, cover with water, add lemon juice, and microwave 3–4 minutes until soft and flexible (not mushy). Drain and pat dry.
3. Roll out thawed puff pastry to about 1/8” thick and cut into 6 strips (about 2” x 10”).
4. Working one strip at a time, brush with butter, sprinkle with cinnamon sugar, then layer 6–7 apple slices along the top edge (slightly overlapping, peel side up). Brush apples with apricot preserves. Fold the bottom of the pastry up over the apples, then roll into a rose and place in the muffin tin.
5. Brush with remaining butter, sprinkle with more cinnamon sugar, and bake for 40 minutes until golden. If apples brown too quickly, cover loosely with foil for the last 10 minutes.
6. Cool for 10 minutes, transfer to a rack, dust with powdered sugar, and serve warm or at room temp.
