Together with our great friend Topher Boehm from Wildflower Brewing & Blending we are hosting 2 very special events next week to launch a brand new beer of his - The St Henry. An Australian wild ale refermented with Moongold apricots from Orange NSW. We've tasted this beer along it's path with Topher and it's absolutely stunning. Friday afternoon with Topher will be behind the bar and on the floor pouring his full range of beers to accompany salty snacks. This will be the first time this beer has ever been poured. On Saturday, our head chef Enrico Tomelleri will be over at Wildflower brewery in Marrickville cooking for the official launch of the St Henry.

We walked past on the weekend and the place was pumping! One of the co-owners Giorgio De Maria, has a reputation as one of the nicest guys in the wine world.

Paski Vineria Popolare officially opened its doors two weeks ago, its first service taking place under the watchful gaze of a Last Supper-inspired artwork.

The giant artwork by Gianluca Cannizzo has a clue to the Paski name. In the bottom corner is co-owner Giorgio De Maria's dog Paski, who is in turn named after an Italian wine.

The trio of owners – De Maria (Giorgio De Maria Fun Wines), Mattia Dicati (vinomito Wine Imports) and chef Enrico Tomelleri (Ragazzi 10 William St) are bullish about the revival of the once premier Sydney hospitality strip.

Paski slides into the space where This Must Be The Place previously operated.

"There's Cafe Fredas Dimitri's Pizza and Fabbrica Pasta Shop production space just a few doors down, and the building where Don Peppino's was is being redeveloped as a hotel," says De Maria.

We are looking forward to watching this strip of Oxford Street evolve over the next few years.

In the next episode of Meet the Judge we present Luke Burgess. After finishing his apprenticeship at Tetsuya's, Luke traveled to Europe before returning to Australia to embark on a career in freelance food and travel photography. Inspired by a stint at Noma in 2010, Luke and business partners Katrina Birchmeier and Kirk Richardson opened Garagistes in Hobart, Tasmania. In 2011, Luke won best new Talent in the Australian Gourmet Traveller Restaurant awards, scored two stars in the Gourmet Traveller restaurant guide and Garagistes was nominated 17 in the top 100 restaurants nationally. Since closing Garagistes Luke has cooked in eight different countries in collaboration with industry colleagues and hosts, ran Sydney’s 10 William St for five months and started a company that specialises in consulting for new and small hospitality businesses with little or minimal exposure to the industry. Luke will judge Best Chef, Dining and FOH for Tasmania.
