There is an important difference between food that has been processed and food that has been manufactured beyond recognition.
Washing, chopping, freezing, fermenting, cooking, or canning can all be forms of processing. They can make nutritious foods safer, easier to store, and more convenient.
Ultra-processing is different.
It often takes food apart, refines it, recombines it, and adds flavors, sweeteners, emulsifiers, colors, or other ingredients designed to improve texture, shelf life, and how irresistible it feels.
And increasingly, research is linking diets high in ultra-processed foods with something the healthy-aging world should pay attention to:
faster biological aging.
That may be partly because these foods tend to bring less intact fiber and fewer naturally occurring nutrients while promoting patterns associated with oxidative stress, chronic inflammation, and disruption of the gut microbiome. Higher ultra-processed food intake has also been associated with poorer microbial diversity and changes in the gut barrier that can encourage inflammatory signaling.
This does not mean every food in a package is damaging.
For example: Frozen vegetables, canned beans, and rolled oats are all technically processed.
A more useful question to ask can be, "how far has this food traveled from the form nature gave it?"
The closer your diet stays to vegetables, fruits, beans, lentils, whole grains, nuts, seeds, herbs, and other recognizable plant foods, the more you naturally feed the systems healthy aging depends on: your gut microbes, your metabolism, and the body’s ability to regulate inflammation.
You do not need to fear convenience, and you certainly don't need a perfect diet.
But if most of what you eat still looks like something that grew from the earth, you are already making one of the simplest choices available for healthier aging.
Food can be processed and still nourish you.
The bigger distinction is whether it came from a plant or had to be invented inside one.
